Traditional Vanilla-Plum-Crumble-Cake
This cake is one of my favourites. Really quick and easy to make and the light sour taste of plums combined with the sweet crumble and vanilla pudding is really astounding… But see for yourself!

Ingredients:
- 500-600g plums (you can also use round plums)
- 300g flour
- 140g powder sugar
- 175g butter
- 1 teaspoon vanilla extract
- cinnamon
- 1 package vanilla pudding (Dr. Oetker)
- 500ml milk
- 2 tablespoons granulated sugar
Getting it done:
- First of all, prepare all the ingredients so that they are close at hand. Preheat the oven to 200-210 °C.
- 500-600g plums/round plums
- To pit the plums/round plums takes probably the longest. When you are done with that, divide the fruit into quarters and put it in a bowl.
- 1 pkg. vanilla pudding · 500ml milk · 2 tbsp granulated suger
- In the next step, prepare the vanilla pudding according to the instructions on the package. It goes somewhat like this: Put about two-thirds of the milk in a pot, add sugar and start heating slowly on a medium heat. Dissolve the vanilla-pudding powder in the remaining third, then add to the pot. While stirring constantly, bring it to a boil, then remove from the heat and cover with a lid for now. Stir occasionally as it cools to prevent a skin from forming.
- 175g butter
- In a second pot, slowly melt the butter.
- 300g flour · 140g powder sugar · 1 tsp vanilla extract
- In a medium-sized bowl, combine the flour, sugar, vanilla extract and melted butter and knead with your hands into a homogeneous dough.
- Use two-thirds of this dough to make the bottom and sides of the cake in the form (30 cm x 22 cm) as shown in the picture below. The height of the edges does not have to be very high, around 1-2 cm is enough.

- Spread the pudding into the prepared form with the dough, lay out the plums on it and sprinkle with cinnamon.
- Use the remaining third of the dough to make the crumble. I also like to make larger sprinkle lumps, as you can see...😜
- Bake in the oven until golden brown, it takes about 35 minutes long. However, every oven works a little differently, so keep checking your cake to make sure it doesn't burn!
- You can serve it with whipped cream, but it's not even necessary, because this miracle cake is smooth anyway thanks to the pudding. Enjoy!
